I’m attaching a picture of what’s leftover from my chicken cacciatore dinner and it’s being hidden in the back of my fridge for lunch tomorrow–back off my leftovers man!

I would have attached a beautiful photo of the Chicken Cacciatore (you’ll have to search it with “chicken cacciatore debi mazar gabriele corcos” because it won’t directly link) with salad and quinoa on a nice plate, but I never think of it until it’s too late.

It Was Wonderful!!!  So here is a picture of beautiful leftovers…  I’m going to try tofu next time.  I thoroughly enjoy Debi Mazar and Gabriele Corocos’ cooking show Extra Virgin.  I think I might just be part of their family!  😉  (Call me! xo)

Curry-Lime Pork & Lemony Kale Salad & Raw Beet Slaw with Fennel, Tart Apple, and Parsley

I recently made Sunny Anderson’s  “Curry-Lime Pork Kebabs” recipe.  But I made a pork loin instead of kebabs, so I don’t know how long we cooked it–my husband BBQ’d it in a Traeger BBQ (which we love!)–so whatever the thermometer is supposed to show for a cooked temperature.  It was very good!

I served the pork loin one night with “Raw Beet Slaw with Fennel, Tart Apple, and Parsley” and one night with Lisa Oz’s “Lemony Kale Salad” (without the hemp seeds) and some slices of avocado.  Every time delicious!!!


chakras/energy centers on doctor oz?! Cool!


I sometimes get the intuitive hit to check out what will be airing on the Doctor Oz show, so twice this week.  When I saw “chakras” mentioned in the write-up I had to record it and see what was up!  Chakras going mainstream 🙂


Kulreet Chaudhary is a neurologist and talks with Doctor Oz about the chakras and about saying mantras (sounds that, when you say them, your tongue presses on nerve points/energy points in your mouth which sends a signal to your brain which in turn sends a signal to the appropriate organ as it relates to the energy meridians.  I have written before that for me mantras have been life-changing.  I recently have gone back to a more formal, daily ritual of chanting mantras because I was back in that mundane life challenge thing, also known as drudgery, when I know that magic lives in the ether of Life.***


Chaudhary also talks about using mudras (hand positions to “lock”in some energy and bring in other life force and allow them to circulate in a specific manner) and about eating certain foods and how they can affect your chakras (which is also discussed in Denise and Meadow Linn’s book “The Mystic Cookbook”).

yummy easy (gluten-free!) banana muffins


(yummy banana muffins–hmm, sorry it’s a little blurry, um, I was running with my iphone to try and get a picture before the muffins were all eaten and they’re all younger and faster than I am)

We’ve made this recipe many times and technically they are “Banana-Macadamia Nut Muffins” from www.epicurious.com but my daughter doesn’t like nuts so I don’t add them.  I make them according to the recipe but switch out the flour for Mama’s Coconut Flour Blend and I cook them for 19-20 minutes.  I also add a streusel mix of some butter, brown sugar, and cinnamon on top of the muffins before I bake them.  They are very good fresh out of the oven with a scoop of vanilla ice cream–even those in the family who do not like “gluten-free” loved them.  Even the next day they are still moist and not crumbly.

this week is cleanse week on dr. oz

today (4/30/2013) was Dr. Alejandro Junger talking about his 3-day cleanse and a few women who had followed it and how they felt better, slept better, had nicer skin and there were a couple women who have followed the program for 30+ days and their better health–one was suffering from autoimmune disorder diagnosed as rheumatoid arthritis and on medication, etc. and has been off medication for 3 months now and lost 30 pounds.  Dr. Junger talks about leaky gut and healing the gut and how the gut is the second brain because “around the intestines is a huge nervous system, that there’s more neurons around the intestines than in the brain in your skull.”  Junger says, “Fixing the gut is the first thing–that’s where health and disease begin.”  www.doctoroz.com/videos/3-day-jumpstart-cleanse-kit

and tomorrow is Deepak Chopra’s stress cleanse with meditation–in the commercial Doctor Oz states “Meditation causes brain cells to regrow.”  Regrow!!!

“Roasted Sweet Potato and Black Bean Tacos”   I think I’m in love 🙂

I have recently clutter cleared and gotten rid of a whole bunch of recipes out of my space and the result was that I had a faint spark of inspiration in cooking (gasp!!)–especially when I unearthed a “Baked Feta” recipe from the March 2012 issue of O, The Oprah Magazine where I happened to have the ingredients and it was quick and simple–I’m talking *instant* gratification (see story here).  My heart was singing and I was ready for more, so I pulled out a few more recipes to try and hastily wrote them onto my grocery list lest the inspiration faded.

Quite frankly, what often happens is I go to the store with my enormous list of new things to buy for my new recipes and I get overwhelmed and wait too long and end up making something else that is familiar with the new ingredients.  I almost did that this time after getting back from our busy Thursday of piano and gymnastics.  But I made the decision of making these tacos and just having a later dinner.

The “Roasted Sweet Potato and Black Bean Tacos” were ripped out of the February 2012 of my O, The Oprah magazine.  I also added chopped zucchini to it and for the chipotle sauce I only added one chipotle pepper and NOT the whole 7 oz. can –too spicy for me and my kids–but not for my husband so he had to suffer with mild chipotle sauce.  Three of the four of us went back for more (little picky one 😉 didn’t complain and enjoyed her dinner but just didn’t want anymore because she was full).  And you can find the recipe here!  Please please just try it.  It’s sophisticated and child-friendly, teenager-friendly all at the same time.

Think of how much much more control we have over our lives when we honor, acknowledge, and take responsibility for what we have created and where we are in our lives…Maybe we don’t have control over everything but we had a part in creating it.  And if we can just do a little, subtle tweak here and there, then maybe that’s all we need to do in order to get onto a smoother track.  (I’m not talking about the heavy stuff in life–that’s what therapists are for.)

What about the piles of recipes, knitting/crocheting hobbies with yarns and patterns–patterns not only to last a  lifetime but hundreds of reincarnations! , art piles, paper piles, piles of books to read, tv shows to watch, movies on queue, etc….or is that just me lol;)  There, I’ve admitted it!  Good stress, fun stress, I’ll admit *distracting* stress.  More fun than other stuff stuff.  Stress I created and manifested.  Stress in a certain area that once acknowledged I can change and tweak so it works better in my life.

I dumped a whole large brown bag of recipes into the recycling a couple weeks ago.  I admit I felt a slight tinge of panic and what else was in there that I might need.  There was a shift in lightness, though.  And the interesting thing is that I ended up trying a new recipe that I never would have found and didn’t know was in there—which is the whole point of having all of these piles of recipes– having new, amazing recipes to try.

***The recipe was for a feta appetizer ***YUM!!! my kids ate it, it’s simple and delicious and you can serve it with regular cracker, or rice crackers or veggies, I even chopped up the leftovers and put it in my soup.  Delicious!!!   ok, I hate to admit this because I’m sort of organized, but I couldn’t find the recipe in my recipe book (?!?) but I did find it on the internet–thanks internet!

Wow! from “bless this mess” to “baked feta”–it’s a winning combination and see you never know what effect clutter clearing will have on your life.  I recommend you clear out one pile of clutter and see where it affects your life…

I am clearing out everything (except the things I definitely use) out of the drawers and cabinets and pantry.  Umm…I’m already feeling overwhelmed.  But it’s time.  I’ve been waiting to do it for a while and now is the time.   I’m also going to set my intention and make up some affirmations to correlate with the feng shui position of my kitchen–my kitchen is in the “Helpful people/angels/friends/compassion/travel” section of my home.  Actually, that might actually explain a lot! 😉  I remember Peter Walsh saying to take everything out and put them in boxes and take out whatever you use and by the end of six months or whatever time you choose, you get rid of whatever is left in the box…except for things you always use at holiday time/birthdays, etc.

I am a huge fan of both Denise Linn (www.deniselinn.com and her books including “Soul Coaching” and “Sacred Space”) and Karen Kingston (www.spaceclearing.com and her book “Clear Your Clutter With Feng Shui”)  I was just on Karen’s blog and it said to catch the New Year’s wave because the energy makes it easier to cut through the clutter and we also have a week before the new moon…so clutter clear through January 10, 2013 in time for the new moon on January 11, 2013 where the energy shifts again.
